
OK this one is more complicated but the idea is to replicate Popeye’s Chicken: Red Beans & Rice.
First at the store you will need to get three things
1 1/2 Pound Package Andouille Sausage (Sometimes called Hot Links)
1 Large Smoked Ham Hock
1 Heaping Tablespoon of REAL LARD
This may take some searching but you need these things.
1 Pound of Dry Kidney Beans (soaked over night)
1 Onion Chopped (There I go again)
1 Bell Pepper Chopped
5 Ribs of Celery Chopped
5 Cloves of Garlic Minced
2 Bay Leaves
1 Teaspoon Cayenne Pepper (Watch this one ingredient because I think I will use less next time… HOT!)
1 Teaspoon Black Pepper
1 Teaspoon Salt
1 Teaspoon Brown Sugar
1 Teaspoon Ground Cumin
1 Teaspoon Thyme
2 Teaspoon Paprika
1 Box of Vegetable Broth
A few dashes of Worcestershire Sauce
Wash and then Soak those kidney beans over night and I mean seriously you have got to do this. Dump them into the bottom of the slow cooker and add all the meats and then the veggies and then everything else.
Set low for 8 hours.
Around the 6th hour or when you notice the beans are getting soft take out bay leaves and then either smash the “beans only no meat” with a potato masher or pull out a couple of cups of the “beans only no meat” and run through a blender till smooth. Dump them back in again and complete cooking.
Serve over rice.

Bacon grease works for lard, and a one-tablespoon quantity of it is rather easier to come by.

Thanks Amber since I live in the south Lard is real easy to come by. But I am sure there are places where bacon grease would be the best bet.
