Pumpkin Pie

I am so stealing this recipe because it actually makes Pumpkin Pie that I like…

1 Pie Crust ~ OK first you have to bake it at 350 degrees for ten minutes in the pie pan with foil and dry beans to hold it down and form it to the pan and then pull the beans and foil for another 10 more minutes to make sure it is dry and slightly golden and ready to be filled.

1 (8 oz) Package… Cream Cheese
2 Cups… Canned Pumpkin (A little less than two 15 oz cans)
Beat the cream cheese with a hand beater and then add in the canned pumpkin so it all turns nice and creamy looking.

1 Cup… Sugar
1/4 Teaspoon… Salt
Beat sugar and salt into the cream cheese pie mixture in the bowl.

1 Egg… plus 2 Egg Yolks
In a separate bowl beat the eggs and yolks.

1 Cup… Half & Half
1/4 Cup… Melted stick of butter
Add both half & half and butter into the eggs.

1 Teaspoon,,, Vanilla Extract
1/2 Teaspoon… Cinnamon
Dump both bowls together and mix thoroughly while adding these last ingredients.

Pour the filling into the pie pan and bake at 350 degrees for about 50 minutes or until the crust edges turn dark golden brown.

    I had a good Thanksgiving. This pie is sort of a mix between a cheese cake and your typical pumpkin pie. And non fattening, I swear, as with all my recipes.
