1 (3 to 4 Pound) Beef Bottom Roast

2 Cloves of minced garlic or a couple of spoonfuls out of the big jar
Salt and Pepa (Ah, push it, push it real good)
In the bottom of the dutch oven fry up…
3 to 4 slices of thick bacon cut into strips
1 or more cups of onion depending on how strong you like onion flavor
Once that is fried up dump it on a plate and stick the roast in and brown in up in all that wonderful bacon fat and onion flavors.
Once the roast is deep browned on the outside dump all the cooked ingredients back in the dutch oven with…
1 cup of organic apple juice
1 can (14.5 oz) of beef broth
4 tablespoons of cider vinegar
Some small whole red potatoes and fresh sliced mushrooms to fill up the rest of the dutch oven with since you know this is a roast and all that.
Cook in the oven at 325 for 2 1/2 to 3 hours till very tender and easy to shred with a fork.
