Lamp Turkey

Did this last year and have been requested to do again must run to store ASAP…

1 (12 Ounce) Can Frozen Orange Juice
1 Cup Kosher Salt
3 Cloves of Garlic
2 Bay Leaves
2 Oranges Sliced
2 Lemons Sliced
2 Limes Sliced
About 1 Tablespoon Fresh Thyme (a little more if you use dry bottled)
About 1 Tablespoon Fresh Ground Pepper

1 1/2 Gallons Water (Make some of this ice)

Combine the orange juice, orange slices, lemon slices, lime slices, thyme, pepper, garlic, bay leaves, salt, and some water in a large stockpot and bring to a boil.
Remove from heat and allow to cool to room temperature.
Place everything in ice chest.
Wash and Dry turkey and remove innards.
Place turkey in large ice chest full of brine mixture and ice breast down making sure cavity gets full and no trapped air.

Allow turkey to stay in brine one to two days.
Remove from brine and dry again.
Cook turkey using one of those baking bags for quick cleanup.

Warning: Turkey may cook 20 to 30 minutes faster due to being brined.
