McCormick Slow Cookers ~ Hearty Beef Stew

Quit over analyzing your food we’re just plain stupid good!
Now we are going to hack the recipe a bit so follow along.
Into your slow cooker throw…
1 Big ass plastic container of “stuffing mix” onion and celery pre-chopped. I found this at the store for the holidays and it so rocks for saving time on many dishes.
1 small bag of those baby carrots.
2-3 pounds of beef stew meat. Take a small pan and with a little oil brown these suckers up.
Dump the browned stew meat on top of all those veggies.
1 package of those pre-sliced plastic wrapped portobello mushrooms just dump on top of the meat. These type of shrooms can cook all day and still stay in one piece.
1 small bag of those mini baby potatoes
1 14.5oz can of Beef Broth mixed with the packet contents and poured on top of everything.
Cook all day on Low and let this baby boil down and become a rich dark brown chunky gravy like concoction. Keep an eye out the last couple of hours and make sure to eventually push the potatoes into the mess so they start cooking properly.
Serve after the potatoes get really soft.

Sometime when you do this, first move the oven rack as high as it’ll go, dial broil, and spread some of those vegetables (not the mushrooms) in a biscuit pan while the burner warms up. They don’t have to be even or in a single layer, and you don’t have to put all the vegetables in the pan. Slide the pan of vegetables onto your top oven shelf, and broil until you see some dark brown spots. Then dump them into the pot and do all the same things. The result is worth having to wash an extra pan.
I know people who drizzle the vegetables with oil before running them under the broiler, but broiling them naked works for me.
